Creamy Carrot Soup
The leaves have changed and sweaters have come out of the closet. With this cooler weather, there’s really nothing better than a nice, warm bowl of soup-- especially veggie-loaded, homemade soup!
This recipe is super simple and will give you and your body what it wants: warmth and nutrients.
Here’s what you need:
1 small onion, chopped
~7 carrots (3 cups), peeled and chopped
2-3 potatoes (1 cup), peeled and chopped
5 cups of water or chicken/ vegetable broth
1 tbsp coconut oil
1 can (14oz) of coconut cream or coconut milk
1 clove garlic, minced
1 tsp ginger
Salt and pepper to taste
Here’s what you do:
Melt the coconut oil in a large pot on high heat.
Add the peeled and chopped carrots, potatoes, onion, ginger and the 5 cups of broth.
Bring to boil.
Reduce to simmer and cook until the carrots and potatoes are super soft*.
*The smaller the veggies are chopped, the quicker they soften!
Slowly stir in the coconut cream.
Transfer batches to blender to mix until smooth.
Add salt and pepper to taste.
Enjoy while hot!
