Pumpkin Bites
The crisp, fresh fall air has arrived.
When you think of fall, a few things come to mind: apples, beautiful coloured leaves, Thanksgiving, football, warm sweaters… and pumpkin.
While mainstream eating trends have forced the heavenly pumpkin-flavour into almost everything, there really is no beating the classic pumpkin pie.
Unfortunately, the common ingredients found in traditional pumpkin pie can usually categorize it as an occasional dessert-- but where’s the fun in that?
If you’re a pumpkin pie lover like us, then you’ll LOVE our Pumpkin Bites. They’re super simple with deliciously nutrient-dense ingredients AND they taste just like pumpkin pie-- but don’t take our word for it, try it out!
Prep time: 10min | Cook time: 25min | Yield: 12 muffin bites
Here’s what you’ll need:
1 ½ cups of pumpkin puree
2 medium, very ripe bananas
1 egg
1 tsp nutmeg
1 tsp cinnamon
¼ tsp ginger
2 tbsp honey or maple syrup (optional)
Whip cream (optional, of course!)
Here’s what you do:
Preheat your oven to 350F.
Peel and intensely mash the bananas
Combine the rest of the ingredients, mix thoroughly.
Pour the mixture evenly in a muffin tin.
Cook until light browning of the tops, about 20-25min.
OPTIONAL: Add a small spoonful of whip cream to the tops of each muffin (as shown in picture).
