Eggplant Mini-Pizzas
Mmmmm, pizza.
In light of our “Don’t deprive, modify” tip for this month, we wanted to share one of our newest favourite dishes: Eggplant Mini Pizzas
Not only are they super easy to make, but they are also a healthy alternative for those savory cravings that is perfect for parties!
Here’s what you need:
1 large eggplant
1 tomato paste (6- 10oz)
½ small onion
4-6 mushrooms
½ green pepper
**optional, but highly recommended: BACON, 2-3 slices
**optional: mozzarella cheese
Spices: Italian seasoning, basil
Here’s what you do:
Preheat the oven to 450F.
Cut the eggplant to make 0.5’’ cross-section (you want them thin enough to get crispy, but just thick enough to stay together when you add toppings!)
Lightly grease a cookie sheet with olive oil and p
lace the eggplant slices on the sheet so that they are laying flat.
Bake at 450F until edges are turning brown (anywhere from 15-35min, depending on the thickness of the slices).
While those are cooking, dice the onion, mushrooms and green peppers and cut the bacon into small pieces
Sautee the onions, mushrooms and green peppers with the bacon.
Add the tomato paste to the pan and turn the heat on low-medium.
Add the spices: we chose Italian seasoning and basil. Mix thoroughly.
Once the eggplant slices are done, add one spoonful of the [delicious] chunky pizza sauce to each slice-- larger slices will need a bit more-- and a thin slice of mozzarella cheese.
Bake in oven for 2-3 minutes (until the cheese melts!)
Let cool for 10 minutes (this is hard to do, but the top of your mouth will thank you) and then DIG IN :D.
