Breakfast Cookies

Who doesn’t like cookies for breakfast?... Well, who doesn’t like cookies at any time of the day?

Exactly. That’s why you’ll LOVE this week’s super easy and delicious cookies that are perfect for breakfast, snack, dessert... whenever! With only 2 (healthy) main ingredients, this will quickly become your go-to recipes.

Here’s what you need:

Yield: 10-12 cookies

Prep time= 5-8 minutes | Cook time=10-12 minutes| Total time= 15-20minutes!

  • 2 ripe bananas (the riper, the better!)

  • 1 cup of oats

  • OPTIONAL: ¾ cup of peanut butter (we used crunchy for texture); ½ raisins or chocolate chips; 3 tbsp honey, cinnamon, buckwheat, flax seeds or cocoa powder

First, preheat the oven to 350F. Peel the bananas in a medium sized mixing bowl and mash until there are no remaining chunks. Mix in the oats and any of the optional ingredients you want. We added peanut butter, cocoa powder and honey!

Make balls on parchment paper or a non-stick/ greased cookie sheet. The key to ensuring that all the cookies are cooked evenly is making the cookie sizes even! We use a spoon (roughly a tbsp) to scoop up the mixture and round into a ball. Once on the sheet, slightly flatten the balls (keep the thickness even)—this will prevent the bottom burning/ middle staying uncooked, and will also quicken the cooking time!

After 10-12 minutes, use the knife/ toothpick test. Insert the knife into the center of a few cookies. If you can pull out the knife cleanly (aka no batter sticking to the knife), the cookies are done! Depending how you like your cookies, remember that they will keep cooking on tray once removed from the oven. We like soft and gooey cookies, so we actually took our cookies out when there was a little batter sticking to the knife, and let them continue to cook and cool on the tray.

And there you have it! Yummy breakfast cookies that are perfect for on-the-go mornings or as a snack for later. In fact, we actually preferred them when they were cold.
