[GF] Vegan Cheesecake
Looking for new and healthy dessert to celebrate the beauty of Spring? Well look no further. This cheesecake is simple, delicious, and full of good stuff! You’ll satisfy your sweet tooth while nourishing your body.
Here’s what you need:
Crust
1 cup of almonds
10 dates
Cinnamon to taste
Filling
⅓ cup of cashews
⅓ cup of coconut oil
⅓ cup of almond milk
3 tbsp of maple syrup (optional)
1 cup of berry of choice (we used a 3-berry frozen mix!)
1-3 squirts of lemon juice
Cinnamon & nutmeg to taste
Here’s what you do:
Use a food processor to blend the almonds into a fine powder.
Add the cinnamon and the dates and mix thoroughly (~30-60sec).
Remove the mixture from the processor and pour into a glass cookware (we used an 8’’ circular dish).
Ensure the mixture is thoroughly mixed then spread and press down evenly to form the crust.
Mix all the filling ingredients in a blender, and blend until completely smooth.
Pour the mixture atop the crust.
Freeze until set (~45 min- 1 hour at minimum).
Sprinkle coconut shavings.
